6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods (wraps, sausage eggs & cheddar sandwiches, egg bites, 2% milk, whole milk) cold holding in cooler in the front food service area and back reach in cooler. Advised PIC all TCS foods shall cold hold at 41F or below. Advised to re-locate to another unit. COS: Milk was discarded.
1-2B - certified food protection manager

Observed the CFSM certificate not available at the time if inspection. Advised PIC the CFSM certificate shall be posted at all times.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed ice bin open during inspection. Advised PIC all food shall be protected against contamination at all times. COS: Bin was closed.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dishes in the sanitize compartment sink with a measurement of 0ppm quat. Advised PIC when sanitizing using quaternary ammonium shall read between 200-400ppm quat. COS PIC increased sanitizer to 300ppm. Advised to re-wash dishes.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used

Observed the reach in cooler in the main kitchen w/ an ambient temperature of 51F. Advised PIC units containing TCS foods shall cold hold at 41F or below. COS: Reach in cooler reached 41F.
