6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food items held at grill prep ice bath measuring above 41 degrees F. Advised to add ice and surround metal pans in ice. Ice had melted in ice bath. COS: PIC added ice and surrounded TCS food items in metal pans in ice and temps fell. CA: TCS food items shall be cold held at 41 degrees F or below.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed main kitchen dish machine using hot water for sanitization measuring 148 degrees F. Advised must repair so it measures minimum 160 degrees F or above. May wash and rinse in unit but must sanitize dishware in 3-compartment sink until repaired. CA: High temp dish machines shall measure minimum 160 degrees F or above.
