Observed TCS foods cold holding above 41F in reach in cooler. Advised PIC all TCS foods shall cold hold at 41F or below. COS: PIC discarded products.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed reach in cooler containing TCS foods with an ambient temperature of 48F. Advised PIC equipment shall maintain an internal temperature of 41F or below. Advised to repair.
