6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple containers of shredded lettuce cold holding in the temperature danger zone above 41 degrees F. at the front-food service PTC #1. TCS foods shall properly cold hold at 41 degrees F. or below. COS: PIC placed ice baths in PTC #1 for proper cooling.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed paper towels not supplied at the main kitchen's hand sink. Paper towels shall be supplied at all hand sinks at all times. Discussed with PIC to supply back hand sink with paper towels.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(k) - insect control devices (c)
Observed insect control device stored above drink dispenser at the front-food service area. Insect control devises shall be installed so that dead insects and insect fragments are prevent front contact with exposed food, clean equipment and utensils, and linens, and unwrapped single-service and single-use articles. Discussed with PIC to relocate inspect control device.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed PTC #1 (front-food service) with an ambient temperature of 51 degrees F. Equipment shall be maintained in a state of repair and condition that meets the requirements specified in subsections (1) and (2) of this Rules. Discussed with PIC to have unit repaired.
