Upon arrival observed fan in front of hand sink. Advised PIC hand sink shall be easily accessible at all times. Advised to relocate fan.

The Person in Charge could not provide details or proof during the inspection that a proper disinfectant would be utilized for responding to a vomiting or diarrheal event in the establishment. Advised PIC Advised PIC an EPA approved sanitizer from list G shall be used to sanitize when responding to vomiting/ diarrheal events.

Observed several knives with encrusted food debris on the surface stored with clean dishes. Advised PIC all food contact surfaces shall be cleaned to sight and touch. COS: PIC moved the knives to the dish sink to be washed.
