Observed sandwiches, salads and wraps cooling with the lids on tight. Advised PIC products shall be cooled properly before placing the lid on containers (ice baths or under refrigeration).
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(t) - food preparation (c)
Observed foods during preparation unprotected from environmental sources of contamination. Advised PIC during prep foods shall be protected at all times.
