16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed 3-compartment, meat sink, and vegetable sink not meeting minimum water temp of 110 degrees F. Hot water at vegetable sink was not working and meat and 3-compartment sink was measuring 108 degrees F. COS: PIC turned up hot water and turned on hot water at vegetable sink and all 3 sinks measured above 110 degrees F. CA: Prep and 3-compartment sinks shall measure minimum 110 degrees F or above.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed walls near grill prep hand wash sink above steam table with buildup and in need of cleaning. Advised to clean. CA: Walls shall be kept clean.
