Observed PIC clean food contact surface with chlorine sanitizer measuring less than 50 ppm chlorine. COS: PIC adjusted chlorine to 50 ppm chlorine. CA: Chlorine sanitizer shall measure 50 ppm to 100 ppm chlorine.

Observed walk in cooler and grill prep reach in cooler not holding temperatures below 41 degrees F. Advised must temporarily close due to insuffient cold holding capacity. Discharge all TCS food items in both coolers. CA: All equipment shall be kept in good repair and proper adjustment.

Observed raw shell eggs stored directly next to cooked chicken in walk in cooler. Also, observed raw shell eggs above ready to eat in the walk-in cooler. Also observed raw shrimp stored above cooked chicken and cooked steak in the reach in cooler. Advised PIC on proper separation. COS: PIC relocated items in the walk in cooler.

Observed pan in the basin of the hand sink in the front prep area. Advised PIC all hand sinks shall be accessible at all times. COS: PIC removed pan from hand sink.
