Upon arrival, observed CFSM certificate not posted in public view. Advised PIC that the current and original CFSM certificate shall be posted in public view. Advised PIC to post the CFSM certificate in public view.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed multiple pizza pans food contact surface stored on storage rack in the main kitchen as clean with carbon buildup. Advised PIC that all food contact surfaces shall be cleaned to sight ant touch. Advised to wash, rinse, and sanitize pizza pans after each use and to replace pizza pans with excessive buildup.

Observed non-food contact surface of the interior of warmer cabinet stored as clean with excessive food debris. Advised PIC that non-food contact surfaces shall be free of accumulation of dust, debris and residue. Advised PIC to thoroughly clean the interior of warmer cabinet.
