Observed facility without a food allergy awareness training. Advised PIC that employees are properlytrained in food safety, including food allergy awareness as it relates to their assigned duties. Advised to obtain/create a food allergy awareness training and provide to the health authority upon request. New violation, correct by 03/20/2026
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed food contact surface of microwave stored as clean (ceiling and interior) in the main kitchen on shelving rack with excessive debris and residue. Advised PIC that equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination may occur. Advised to increase the cleaning frequency of the interior of microwave. Repeat, correct by 03/23/2026
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed hot water manually shut off at the prep sink in the main kitchen. Advised PIC that hot and cold water under pressure shall be available at all sinks. COS-PIC manually turned on hot water at prep sink.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed sever staining on ceiling tiles in the main kitchen area. Advised PIC that the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Advised PIC to thoroughly clean all ceiling tiles. Repeat, correct by 03/23/2026
