Observed employee touch cell phone and proceeded to handle clean spatula at grill in the main kitchen. Advised PIC on when to wash. COS: Had food employee wash hands at the hand sink.
2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(b) - cleaning procedure (p)
Observed food employee wash hands in cold water at the main kitchen's hand sink. Advised PIC/food employee on proper handwashing procedures. COS: Had food employee rewash hands at the hand sink in the main kitchen.

Observed facility without a food allergy awareness training. Advised PIC that all employees shall be properly trained including food allergy awareness. Advised to obtain food allergy awareness training and provide to the Health Authority upon request.

Observed facility CFSM certificate posted expired. Advised PIC that a CFSM shall be current and posted in public view. Advised to post an unexpired CFSM certificate.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed food contact surface of the ice bin lid connected to the beverage machine at the wait station stored as clean with black residue. Advised PIC equipment food contact surfaces and utensils shall be cleaned at any time during the operation where contamination may occur. Advised PIC to increase the cleaning frequency of the ice bin lids of the beverage machine.
