Observed container of cooked shrimp in cooling process stored tightly covered in walk in cooler. COS: PIC loosely covered. CA: Use proper cooling methods to rapidly cool TCS food items.

Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed visible light entry at the backdoor of the facility. Advised PIC that all outer opening shall be protected against the entry of rodents and pest by solid, self-closing tight-fitting doors. Advised PIC to place sealant/weatherstrip to the back door of the establishment.
