6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods (raw chicken) cold holding in a cooler above 41F. Advised PIC all TCS foods shall cold hold at 41F or below. Advised to re-locate to the WIC.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink in the main kitchen area blocked. Advised PIC hand sink shall be accessible at all times. COS: PIC unblocked hand sink.
2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
Establishment does not have established procedures for employees to follow when responding to diarrheal events. Advised PIC to obtain written clean up procedures.
