Advised PIC Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. COS: PIC ceased taking orders until corrected. PIC restarted hot water tank and peak hot water demands were restored (after 2 minutes) and verified at time of inspection (all handsinks & 3-compartment sink), was allowed to resume operation after correction.
