Observed frozen tilapia thawing in meat sink in main kitchen without running water. COS: PIC turned on running water less than 70 degrees F. CA: Use proper thawing methods to thaw TCS food items.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal items (ice cream & popsicles) in main kitchen reach in freezer. COS: PIC moved to designated area. CA: Keep employee personal items in designated area to prevent cross contamination.
