Observed raw chicken stored above container of tomatoes and stored with cooked chicken and cooked shrimp in walk in cooler. Also observed raw shell eggs stored with peas and carrots and above tea and containers of vegetables in walk in cooler. Observed cooked egg rolls stored with raw chicken in grill prep prep top cooler. COS: PIC moved with proper separation. CA: Store food items according to final cook temp.

Observed bulk food containers unlabeled in main kitchen. Advised to label. CA: Food items outside original packaging shall bear common English name of food.

Observed cardboard lining shelves throughout main kitchen and walk in cooler. Advised to remove. CA: Equipment and shelving shall be smooth, non-absorbent, and easily cleanable.
