Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed food employee handle cell phone and then proceed to handle clean utensil at flat-top stove for just cooked beef patties without handwashing step before initiating food prep. Advised PIC Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and before donning gloves to initiate a task that involves working with food. COS: Had food employee cease prep and handwash.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed excessive rusting on interior food contact surface of the interior of the bulk ice machine on white panel. Advised PIC equipment food-contact surfaces and utensils shall be cleaned at a frequency specified by the manufacturer; or absent manufacturer specifications and at a frequency necessary to preclude accumulation of soil or mold. Advised PIC to increase the cleaning frequency of the bulk ice machine in the main kitchen. Advised PIC to ensure to eliminate rusting interior.
