Observed raw shrimp stored next to the onions and broccoli inside the prep unit. Raw shell eggs were stored on the top shelf next to the broccoli, noodles were stored next to the raw chicken, cabbage was stored on top of the raw chicken inside the reach in cooler. CA: Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables shall be separated and protected from cross contamination. COS: The food items were rearranged to prevent cross contamination.

Several sauce containers stored on the prep table was observed uncovered. CA: Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: The sauces were covered.
16B - plumbing installed; proper backflow devices

The hand sink inside the kitchen was observed leaking water. The additional pipe under the sink was observed missing. CA: A plumbing system shall be repaired and maintained in good repair.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
A scoop used for the rice was observed cracked. CA: Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.
