Pans of wonton and vegetable egg rolls stored inside the walk in cooler was observed uncovered. CA: Food items must be stored in packages, covered containers, or wrappings to provide protection from overhead contaminants. COS: Container lids were placed on the food items.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Food debris was observed on the utensils stored on the rack near the wok station. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: The utensils were removed and stored inside the 3-compartment sink.

Observed dead roaches inside the glass panel of the wall and inside the cabinet on the front prep line. CA: Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.

The prep sink was observed leaking when operating. CA: A plumbing system shall be repaired and maintained in good repair.
