Observed dishwasher in main kitchen wash food contact utensils for use without sanitizing before use.
CA: Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.
COS: PIC set up sanitizing sink at 50ppm Cl and sanitized food contact utensils.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed build up and food splash on stainless steel being fryers and stove area in main kitchen.
CA: Physical facility shall be maintained clean.
