Observed 2 packs of sliced turkey meat that have been opened and not dated after opening. All food products must be dated once taken out of original packaging.
11D - thermometers provided and accurate
Regulation: 511-6-1.05((2)(l) - tmd, ambient air & water - accuracy (pf)
Observed broken thermometers in holding units. Replace all broken thermometers and place them in the front of the units and take daily logs.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(c) - backflow prevention (p)
Observed water buildup inside prep top bottom shelf. Unit seems to be sweating bad on the back side of the unit. Please monitor and remove water from collecting here to prevent contamination. Have unit checked if needed.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed buildup of splatter on some of the walls in the main kitchen. Clean the walls in a manner to keep splatter removed.
