CA: Except when dry cleaning methods are used as specified under subsection (7)(e) of this Rule, surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned: In equipment such as ice bins. PIC will have ice machine cleaned.

Observed chicken in the meat sink not being properly thawed. CA: Except as specified in paragraph 4 of this subsection, time/temperature control for safety food shall be thawed: Completely submerged under running water: At a water temperature of 70°F (21°C) or below. COS PIC turned the water on at the meat sink.

Observed scoop in white rice bin not properly stored handle up. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. COS PIC removed scoop to wash, rinse and sanitize.

PIC covered carrots in WIC.

PIC will have employee to cover or invert dishes over employee handwashing sink.

Observed hard boiled eggs and frozen fried eggs not have the description of being pasteurized. CA: Pasteurized eggs or egg products shall be substituted for raw eggs in the preparation of: A partially cooked animal food such as lightly cooked fish, rare meat, soft-cooked eggs that are made from raw eggs, and meringue. PIC will serve pasteurized eggs to the residents of the HSP facility.

Observed no test strips to be able to test sanitizer solution at three compartment sink and sanitizer buckets. CA: test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. PIC will order test strips ASAP to be able to test sanitizer solution.

Observed a wet mop not hung to properly dry. CA: After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. COS PIC hung mop to properly dry.

Observed 8 dented cans in dry storage area (cherry pie filling, fruit cocktail, lemon filling, collard greens and sloppy joe mix). CA: Products that are held by permit holder for credit, redemption, or returned to the distributor, such as damaged, spoiled, or recalled products, shall be segregated and held in designated areas that are separated from food, equipment, utensils, linens, and single-service and single-use articles. COS PIC removed dented cans from dry storage area.

Observed a leak on faucet at 3 compartment sink. CA: A plumbing system shall be repaired according to law; P and maintained in good repair. PIC will have leak on faucet at 3 compartment sink repaired.
