Observed employee enter kitchen and immediately put on gloves and work on cook line without properly washing hands. CA: Ensure employees know when to wash hands and follow those standards.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee prepare or work with food while wearing jewelry and another without proper hair restraint. CA: Ensure hair restraints are worn and no jewelry except plain band.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed personal items stored outside of designated areas (drink cups, vapes, tobacco products, etc.). CA: Designate areas for employees use and ensure areas are used.
