6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed meatballs in steam table at 115F. TCS food items stored for hot holding should be 135F or above. Meatballs where within the 2-hour allowable time to reheat and were reheated above 165F to 180F.
