Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed metal bowl in handwash sink and sink partially obstructed by shelving. A handwashing sink shall be maintained so that it is accessible at all times for employee use and may not be used for purposes other than handwashing. Bowl removed from sink during inspection.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed three containers of chicken stored uncovered in reach-in coolers in main kitchen. Food shall be stored covered to prevent contamination. Containers covered during inspection.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed no date labels on multiple containers of foods in the reach-in and prep-top coolers.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed chicken wing in multiple sinks thawing without being completely submerged or under any water running. Temperature control for safety foods shall be thawed completely submerged under running water or refrigeration. Manager turned water on during inspection.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Observed missing thermometers in some reach-in freezers and coolers. The sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed missing/broken and stained ceiling tiles. Mop well not accessible for dumping mop water due to buckets and equipment stacked in mop well area.
