Observed prepped items in reach-in cooler with no label; bag of sliced tomatoes and bag of cut green peppers. Observed Au jus sauce stored past used by date of 2/9/26. Food items that should bare date label or exceeds 7 days should be discarded. All food items discarded during inspection.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping clothes stored on countertops throughout kitchen. Cloths in use to wipe equipment should be held between uses in chemical sanitizer. Cloths moved to sanitizing buckets during inspection.
