4-1A - food separated and protected

Observed raw beef stored next to cooked beef in walk-in cooler and raw scallops stored next to cooked fish and pre-cooked oysters in reach-in cooler. Cooked and ready-to-eat foods shall be stored separately from raw food to prevent contamination. Food items moved to proper storage order during inspection.
4-2A - food stored covered

Observed multiple containers of prepared food left uncovered in multiple reach-in coolers. Containers shall be covered to prevent contamination. Food covered during inspection.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed black mold-like buildup on multiple soda nozzles during inspection. Food contact surfaces shall be cleaned at a frequency to prevent buildup. Nozzles washed, rinsed, and sanitized during inspection.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple prepared and cooked items with no date label. Foods items held for more than 24 hours shall bear a date label. Observed food items stored past date marked, including cooked salmon 2/12, rice 2/4 and pumpkin 2/5. All food items discarded during inspection.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no proper test strips to measure concentration of sanitizer in three-compartment sink. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Correct test strips ordered from supplier during inspection. Instructed to utilize mechanical dishwashing machine for proper sanitization until test strips arrive.
