Observed soiled food contact surfaces of several plastic trays used in the Duke ware are encrusted with a heavy build up of grease deposits. Also observed soiled food contact surface of Menumaster microwave. Observed black grease on the inside door of the unit. PIC/CFSM will have everything cleaned by 07/08/2025.

Observed metal utensils stored in a plastic container between uses in water at 105°F. Can not store utensils between uses in water less than 135°F. Explained proper temperature for storing utensils to employee and CFSM. COS: Container of water was removed.

Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in the Central Prep Unit located in kitchen. See temperature log for said items. COS: PIC discarded all of the TCS food from unit. Will use lettuce, tomatoes, and hot dogs from WIC. EH gave PIC several logs to help with monitoring: cooking & reheating log, time & temp log, refrigeration log, cooling & temp log, and TPHC log. EH discussed the logs with the PIC. They will not use unit until it is maintaining proper temperature.

Observed encrusted food deposits on several plastic warming trays/pans used in the Duke warmers. Food buildup observed on trays/pans. Also observed food buildup in the microwave food contact surface. Will have all items cleaned within 24 hours.

Observed soiled nonfood contact surfaces of coolers, freezers, fan on floor in prep area, and rusted shelves by WIC and ice machine. Will have equipment cleaned within 5 to 7 days. Shelves will be painted within 7 to 10 days.
