Observed beef patty burgers with American cheese hot holding at temperatures below 135F, located in the steam table. CA: TCS foods shall hot hold at 135F or higher. COS: PIC placed the beef burgers into the oven to reheat to 165F+. Once above 165F, the beef patties were placed back into hot holding. Advised to ensure TCS foods are starting above 135F before being placed into hot holding. Advised to check the temperature after the food is prepped (i.e. patties and put on bun) and to place back into oven to reheat to 165F+ if the temperature has dropped below 135F.

Observed dried food debris on the meat slicer. CA: All food contact surfaces shall be clean to sight and touch. Advised to follow the manufacturers instructions for cleaning and sanitizing the slicer. Advised to ensure all parts of slicer are thoroughly cleaned and sanitized.

Observed quat sanitizer solution below the manufacturer's recommended concentration of 200ppm to 400ppm. Observed quat santizier solution (in a bucket) at 0ppm-100ppm CA: Quat sanitizer shall be maintained at the manufacturer's recommended concentration for sanitizing food contact surfaces (quat being used at facility during time of inspection states to maintain sanitizer at 200ppm to 400pm). COS: The PIC remade the sanitizer solution to 200ppm-300ppm quat concentration.
