Observed Vegetable prep sink observed unclean to sight and touch with black build up and debris. CA: Food and nonfood contact surfaces shall be cleaned regularly and by sight and touch to prevent build up. PIC instructed to wash, rinse and sanitize prep sink before use.

Time was not indicated on pizza sauce at the time of inspection. CA: time shall be indicated on pizza sauce that is able to be held for 10 hrs and on small containers of pizza sauce. COS- time indicated. Discussed with PIC that if time not indicated in future sauce will have to be discarded.
