6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS food items measuring temperatures above 41*F (SEE TEMPERATURE LOG). CA: Advised PIC Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC discarded food items during time of inspection
10D - food properly labeled; original container
Regulation: 511-6-1.04(7)(c) - food labels (pf, c)
Observed 2 sauce bottles unlabeled stored on the cart in front of the wok station and 1 container of seasoning unlabeled stored under the steam well. CA: Advised PIC Food packaged in a food service establishment, that is not provided by a foodservice employee upon consumer request, shall be labeled as specified in law, including 21 CFR 101- Food labeling, and 9 CFR 317 Labeling, marking devices, and containers.
- Label information shall include:
(i) The common name of the food, or if there is no common name, an adequately descriptive identity statement. COS: PIC labeled items with a sharpie during time of inspection
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed utensils stored inside of a container holding at 65*F. CA: Advised PIC during pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored:. In a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi). COS: PIC dumped the water and cleaned the utensils
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the Miagali single-door reach-in cooler unable to hold TCS food items at 41F with an ambient reading of 47F. CA: Advised PIC Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. PIC has been advised to provide documentation of repairs before re-using the unit and that if the cooler cannot effectively hold TCS food items at 41*F or below it will need to be replaced
