6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed pasta noodles, stewed tomatoes, grits and maranira sauce holding at temperatures above 41*F stored inside walk-in cooler #1 in the main kitchen. CA: Advised PIC except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC discarded food items during time of inspection
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed 3 soda nozzles behind the bar with pink debris build-up. CA: Advised PIC equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: Nozzles were cleaned during time of inspection
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed several live gnats behind the bar. CA: Advised PIC The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by:

15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the latch to walk-in cooler #1 unable to completely close, lock mechanism not effective during service hours. CA: Advised PIC equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
Observed several stand alone cutting boards with heavy black stains. CA: Advised PIC surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced.

Observed racks inside walk-in cooler #1 and #2 rusted. CA: Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
