4-1A - food separated and protected

Observed raw beef stored above sauce and veggies inside the reach-in cooler behind the sushi bar, observed raw shelled eggs stored mixed in between a bag of bean sprouts and fruit, and observed raw fish stored directly on top of a container of green beans stored inside the reach-in cooler in the main kitchen across from the grill. CA: Advised PIC Food shall be protected from cross contamination by: arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: PIC re-arranged items during time of inspection
4-2B - food-contact surfaces: cleaned & sanitized

Observed 2 knives stored in between 2 prep top coolers. CA: Advised PIC Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC removed knives and placed them at the 3-compartment sink to be washed and sanitized
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the dish machine producing 200PPM of chlorine. CA: Advised PIC Chemical Sanitization - Temperature, pH, Concentration, and Hardness. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions P, and shall be used as follows:
- A chlorine solution shall have a minimum temperature based on the concentration and pH of the solution. PIC has been advised to discontinue using the dish machine until the manufacture has adjusted the chlorine levels, a video of the machine being tested shall be emailed to tairyn.broadnax@dph.ga.gov, PIC will wash, rinse and sanitize at the 3-compartment sink
4-2B - food-contact surfaces: cleaned & sanitized

Observed the microwave in the main kitchen exterior and interior unclean. CA: Advised PIC equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC cleaned during time of inspection

Observed visible light at the bottom of the back door in the main kitchen. CA: Advised PIC 1. Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by:
(i) Filling or closing holes and other gaps along floors, walls, and ceilings
14C - single-use/single-service articles: properly stored, used

Observed plastic containers used as scoops stored in direct contact with 2 containers of dry seasonings. CA: Advised PIC . Single-service and single-use articles may not be reused. COS: PIC removed containers during time of inspection
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(a) - materials, general requirements (p, c)
Observed foil used to line shelve above the stove and next to the fryer. CA: Advised PIC Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: P safe P, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition. COS: PIC discarded foil
15B - warewashing facilities: installed, maintained, used; test strips

Observed PIC unable to provide chlorine test strips for the dish machine. CA: Advised PIC A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal item stored with facility related items and drinks stored on prep surfaces behind the sushi bar and main kitchen. CA: Advised PIC Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC relocated items
