Equipment Food-Contact Surfaces and Utensils. Equipment food-contact surfaces shall be cleaned and maintained between uses, in that rust was observed on interior on ice machine in the kitchen. PIC was advised to have unit serviced by a technician by 12/2/25v and send pictures to inspector.
12A - contamination prevented during food preparation, storage, display

Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing, where it is not exposed to splash, dust, or other contamination. Observed liquid from condenser leaking directly onto bottom floor area of prep top cooler next to reach in freezer and forming a pool of standing water. PIC was advised to have unit serviced by a technician by 12/2/25.
14A - in-use utensils: properly stored

Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. Observed utensils without handles used to dispense , white pepper and garlic powder and stored directly in said food items. COS: PIC had food worker remove said utensils.
14B - utensils, equipment and linens: properly stored, dried, handled

Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: Shall be air-dried or used after adequate draining before contact with food. Observed food containers/ equipment stacked while still wet on dish storage shelve above three compartment sink in dishwashing area.
15C - nonfood-contact surfaces clean

Equipment, Food/Nonfood-Contact Surfaces, and Utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed an accumulation of grease buildup on sides of deep fryers and a heavy accumulation of grease build up on ventilation hood filters above fryers in kitchen. Additionally, storage shelve under front food service area was observed with an accumulation of food residue. PIC was advised to have said areas cleaned and email pictures to inspector by 12/2/25.
