Observed sanitizer at 3-compartment sink above manufacturers recommendation. CA: Poisonous or toxic materials shall be used according to: Manufacturer's use directions included in labeling, and, for a pesticide, manufacturer's label instructions that state that use is allowed in a food service establishment. PIC will have sanitizer dispenser calibration corrected.

Observed mechanical dishwasher using hot water sanitization with a final rinse temperature of 101 degrees Fahrenheit. CA: Except as specified in paragraph 2 of this subsection, in a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194ºF (90ºC), or less than: for a stationary rack, single temperature machine, 165ºF (74ºC); Pf or for all other machines, 180ºF (82ºC). PIC will have dishwasher serviced and repaired, and use three compartment sink for cleaning and sanitizing equipment until the dishwasher is repaired.

Observed cornmeal scoop handle being stored in contact with food item. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container. PIC positioned the scoop to prevent contact with the food item.

Observed the fume hood with an accumulation of dust. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will have the fume hoods cleaned.

Observed an accumulation of trash on the ground surrounding the dumpster. CA: Soiled receptacles and waste handling units for refuse, recyclables, and returnables shall be cleaned at a frequency necessary to prevent them from developing a buildup of soil or becoming attractants for insects and rodents. PIC willhave the area cleaned.

Observed the floors under the fryers and stove not free from an accumulation of grease and debris. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. PIC will have the floors cleaned.

Observed the interior of the ice machine not clean to sight or touch. CA: Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. PIC will have the ice machine washed and sanitized.
