Observed black residue on inside lid of ice bin in front service area. Observed brown residue on panel inside ice machine of main kitchen. CA: CA: Food contact surfaces must be cleaned to sight and touch. COS:PIC had employee clean the lid oc ice bin and panel inside ice machine

Observed dishmachine being utilized with chlorine sanitizer at 0ppm. CA: Food contact surfaces must be sanitized after being cleaned at the appropriate concentration. COS: PIC had employee fix dishmachine to dispense proper concentration of sanitizer.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed 5 sheet pans of cooked whole pork shoulder in walk in cooler without dates marked. CA: Ready to eat TCS food prepared in a food establishment and stored for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded. COS: PIC date marked each pan of pork shoulder
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed several live flies flying around in main kitchen area. Observed 1 live roach on wall above hand sink in main kitchen area. Observed doors to facility maintained open during operations CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises.

Observed build up of excess food debris/residue on floors under equipment and dust/soil build on ceiling of main kitchen area. CA: All nonfood contact surfaces must be maintained clean
