6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed the following TCS foods not being hot held at 135 degrees F or above: Chicken patty in warmer drawer, chick patties and hot dogs under heat lamp, and chili in steam table of main kitchen. CA: TCS foods must be hot held at 135 degrees F or above. COS:PIC discarded the chicken patties in warmer drawer and reheated remaining foods to 172, 170, 167 respectively.

Observed black soil buildup on ceiling inside ice bin at drive thru window. CA: Food contact surfaces must be maintained clean to sight and touch. COS:PIC cleaned ice bin
