Facility using key drop without key drop agreement on site. CA: PIC must ensure written procedures and plans, where specified by this Chapter as developed by the food service establishment, are maintained and implemented as required. COS: PIC had corporate email key drop agreement during exit interview of inspection
4-2B - food-contact surfaces: cleaned & sanitized

Observed brown rust residue on white panel inside ice machine of main kitchen. CA: Food contact surfaces shall be cleaned to sight and touch. COS:PIC cleaned panel

Observed old food still stuck to several clean metal containers and utensils stored on dish drying rack of main kitchen. CA: Food contact surfaces shall be clean to sight and touch COS: PIC removed the dishes from drying rack and restored them as dirty in the washing compartment of 3 comp sink to be rewashed

In walk in cooler of main kitchen, Observed a multiple packages of raw chicken stacked in containers and in pools of excess water. Observed water from ice bath pouring over the rim of containers onto raw sealed chicken packages below and onto an opened raw chicken package. CA: Packages may not be subject to the entry of water/contamination due to the nature of its packaging, wrapping, container and/or positioning within the ice or water. COS: PIC discarded opened raw chicken package and employees dumped water from containers with raw chicken and from ice baths

Observed floor covered with standing water in main kitchen area under ice bath equipment, in dish area and dry storage area and in front of walk-in cooler and inside walk in coolers. CA: Floors must be maintained dry
