6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed the following foods cold holding above 41 degrees F: 2 bags of beefs, 1 bag of refried beans, 1 bag of chicken, 1 bag of nacho cheese in walk in cooler of main kitchen. CA: TCS foods must be cold held at 41 degrees or below. COS:PIC discarded nacho cheese, beef, chicken and refried beans
