6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cold TCS stored above 41 F (see above temperatures). COS. Items discarded. Code: TCS food that uses cold holding as a control for safety shall be held at 41 F or below.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(o) - medicines, restriction & storage (p, pf)
Observed that the facility is storing employee medication with single-use items in the back storage area. COS. Removed. Code: Medications that are necessary for the health of employees shall be stored in a manner that prevents contamination of food and food contact surfaces.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observed that not all spray bottles in the front of house area were labeled with the common name of the product. COS. Labeled. Code: Working containers of chemicals shall be labeled with the common name of the product inside.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.05(3)(a) - cooling, heating, and holding capacities (pf)
Observed that the facilities walk-in cooler is not working and that the facility no longer has adequate storage capacity for their mode of operation/menu. COS. Facility is temporarily closing until the walk-in can be repaired. Code: Facility shall have adequate means of holding to maintain food temperatures.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris on and in equipment, particularly of the reach-in freezer in the rear of the facility. Code: Equipment shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damaged wall tile by the walk-in cooler and damaged floor tile in the walk-in cooler; observed accumulation of debris under shelves and equipment, particularly on the line and in the rear storage area. CA: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris; facility shall be maintained in a state of good repair.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee belongings (keys, headphones) stored above single-use items in the rear storage area. COS. Moved. Code: Employee belongings and acitvities shall be in designated locations that prevent contamination of food and food contact surfaces.
