Observed multiple food items in the reach in cooler being stored uncovered. COS items were covered with lids. Code: food shall be stored covered.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the concentration of the sanitizer in the 3-compartment sink was below the manufacture's recommendation for proper sanitization. COS: sanitizer water was adjusted to the proper concentration. Code: sanitizer solution shall be maintained in accordance to the manufactures recommendation.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed that the rear exterior door, when closed had cracks under the door near the opening. Code: Exterior doors shall be self-closing and tight-fitting.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed containers stacked while wet. COS: containers were unstacked Code: Container shall be thoroughly air dried prior to stacking.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed that the facility was using cardboard as a nonfood contact surface liner. COS: removed. Code: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility was unable to provide test strips to test the concentration of sanitizing solution. Code: A test kit or other device that accurately measures the concentration in of sanitizing solutions shall be provided.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris and food on the inside of food storage units. Code: Equipment shall be thoroughly cleaned, and cleaning frequency shall be enough to prevent accumulation of debris and food residue.
