Observed several employee drinks stored in non-single-use containers that were stored on the shelves on top of one of the prep tops in the main kitchen. COS. Removed. Code: Employee drinks shall be stored in single-use containers with a lid and a straw and shall be handled to prevent contamination of food and food contact surfaces.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloth stored on the counter in back preparation alleyway. Code: Wet wiping cloths shall be stored in sanitizer solution between uses that is at the appropriate concentration.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed that the facility is storing single-use items in a mechanical room with unfinished and open ventilation. Code: Single-use items shall be stored in a manner and in a location that prevents contamination.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(4)(b) - fixed equipment, spacing or sealing (c)
Base violation: Observed fixed equipment, counters and sinks, that were not sealed to wall in the main kitchen. Code: Fixed equipment shall be spaced to allow for easy cleaning or be sealed to the wall.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Observed that in the mechanical room that the facility is attempting to use as a dry storage area has unsealed wood in it. Code: Non-food contact surfaces shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Base violation: Observed accumulation of debris in equipment, specifically in freezers on the line, reach-in in the downstairs bar, and in the freezer in the alcohol storage area. Code: Equipment shall be thoroughly cleaned and cleaned frequently enough to prevent accumulation.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Base violation: Observed accumulation of debris on the floors and under shelves/equipment, particularly at bar on the Royal Lanes side and in alcohol area dry storage and walk-in. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.

Observed that the mechanical room that the facility is using for dry storage has unsealed concrete floors. Code: Floors, walls, and ceilings shall installed so they are smooth and easily cleanable.
