6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed prepared TCS items that were date marked to be held longer tha 7 days (example, Gumbo that was prepared on 1/27/2026 but was marked to be discarded on 2/12/2026), observed unmarked opened, manufactured TCS foods that were not date marked, and observed that the facility was inconsistently dating items with some items have both the date of preparation and some only having a single date. COS. Dates added. Code: Prepared TCS items and opened manufactured TCS items shall be date marked with the day of preparation, the day of discard, or both, however, the method of date marking shall remain consistent and they shall not be held longer than 7 days with the day of preparation being day 1.

Observed prepared TCS items that were held past their date mark (pasta, chicken salad, cooked products) with the oldest being prepared on January 8, 2026, which was chicken salad. COS. Items discarded. CA: Prepared TCS items shall be discarded 7 days from when it was prepared and opened manufactured foods shall be discarded within 7 days of opening or the date of expiration on the container, whichever is sooner.

Observed non-easily identifiable food that was not labeled with the common name of the product, such as spices and powders on the line, squirt bottles of liquids, and bulk storage containers of spices and powders. COS. Labels added. Code: Non-easily identifiable foods shall be labeled with the common name of the product.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed that the wet wiping cloths in the facility were stored in water with no sanitizer solution in them; observed wet wiping cloth hung over the side of buckets so that they were not submerged in the sanitizer solution. COS. After running the chemical mixers for several minutes, the sanitizer solution did start to come out at the right concentration; new sanitizer solutions were made and all wet wiping cloths placed into them. Code: Wet wiping cloths shall be stored in sanitizer solution between uses that is at the appropriate concentration.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Observed dirty dishes stored in the produce sink. COS. Removed. Code: Produce sinks shall only be used for washing fruits and vegetables and thawing/preparing ready-to-eat food so long as the basin is washed, rinsed, and sanitized both before and after thawing/preparation.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed that the 3-compartment sink faucet was leaking and that the wall mounted chemical mixer at the dishpit was leaking. Code: Plumbing system and fixtures shall be maintained in a state of good repair.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee belongings stored above food. COS. Removed. Code: Employee belongings and activities shall be in designated areas that prevent contamination of food and food contact surfaces.

Observed containers stacked while wet. Code: Containers shall be thoroughly air dried prior to stacking.

Observed that the facility had a bar and storage of items on carpet. Code: Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.

Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damaged ceiling in the rear storage area. Code: Facility shall be maintained in a state of good repair.
