Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed that the facility had foods date marked with the prep date but did not include the expiration date. COS: items were date marked with the correct expiration date. Code: food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded. The day of preparation shall be counted as Day 1 and held for 7 days maximum.

Observed a box of shell eggs stored directly on the floor of the walk in cooler. COS: box of eggs were moved to the bottom shelf of the cooler. Code: food items shall be stored at least 6 inches (15 cm) above the floor.
