Employee is not washing hands in between different tasks: exiting truck, then returning and handling bottles of condiments, touching clean utensils, dropping fries into fryer. Ensure employees wash hands properly in between different tasks.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Base violation: Observed unlabeled spray bottles. CA: All working containers of chemicals shall be labeled with the common name of the product.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
The back drop gate on the unit is down and there is no screen present. The outer openings must be protected. Ensure the outer openings are closed or properly protected.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
There is no hot water available at the hand sink. The water heater has not been turned on yet. Food prep is occurring. Ensure hot water is available prior to any food prep for proper hand washing. Water heater is turned on and water does get hot.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Base Violation: Observed accumulation of debris under shelves and around edges of the floors. CA: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.
