Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed multiple stacks of sliced cheese removed from their original packaging and placed into a sealed plastic bag with a date mark of 4/19/26. CA: TCS foods must be discarded after 7 days. COS: The CFSM discarded the cheese.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed a Styrofoam cup and a small plastic container without a handle stored directly in a container of sugar in the dry storage area. CA: Scoops must be stored with the handle above the food line. COS: Both items were removed from the sugar.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed multiple boxes of single-use cups stored directly on the floor in the dry storage area. CA: Utensils must be stored at least 6 inches off of the floor. COS: The utensils were moved onto a shelf.
