Observed at the time of this inspection that back door exit in base of operations was not closing flush and allowed light to come through top right door frame and the bottom door area as well as through unsealed hole where old door handle used to be on left door panel in. CA: All doors and exits leading to the outdoors shall be installed and maintained as to keep pests from entering the facility.

Observed that two bags of tortellini were being stored uncovered in a chest freezer in the kitchen area at the time of this inspection. COS: Manager covered food items. CA: All TCS food items shall be stored in closed bags/covered to prevent vertical contamination.

Observed during the course of this inspection some SSIs (coffee filters, empanada plates) and a stack of clean dishes being stored incorrectly (upside down). COS: Manager flipped both the SSIs and dish stack (Base of operations). CA: Manager stated that they will store SSIs and dishes correctly (Base of operations). CO-inspected with Wayne Nuenke.
