Observed several foods items not covered in the front service- chips- in the main kitchen walk-in cooler - chicken, pork, egg roll- in the walk-in freezer - crabs-. corrective action (CA): Ensure foods are fully covered unless they are in the cooling process. COS: All concerned foods were covered.
4-2B - food-contact surfaces: cleaned & sanitized
Observed the can opener with heavy buildup. CA: Ensure all food contact surfaces are clean and sanitized frequently to prevent buildup or accumulation. Cans opener shall be cleaned by 10/10/2025

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
No chlorine sanitizer in the dish washer. CA: Ensure dish washer has proper concentration of sanitizer at every used. COS a new bottle of sanitizer was provided and replaced during the inspection.
