Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed no quat sanitizer in the 3-compartment sink. Corrective action (CA) Quart sanitizer dispenser and sanitizer shall be working with a concentration between 100 ppm to 400 ppm. The optimal concentration shall be 200 ppm. Sanitizer device shall be serviced by 10/29/2025. Also, please email work or a report when service the health Authority.

Observed the inner surface of the ice bin located in the dining area (outside) with a black/ brown stain. CA: All food surfaces shall be cleaned and sanitized frequently to prevent accumulation and stains. If the ice bin is not free from stains after being cleaned and sanitized ice bin shall be replaced. In the meantime, the customer shall only be served ice from the shack bar.

Observed a chemical bottle stored in the chemical shelve not identified. CA: If transferred, chemicals shall be identified with a common name. COS: chemicals were identified during the inspection.
