Observed raw ground beef stored above raw pork in walk in cooler. Observed raw bacon stored above chipotle sauce in prep top cooler. Raw meats must be stored according to cook temperature, with raw pork above raw beef. Raw meats must not be stored above ready to eat items. CA: Foods did not appear to be contaminated. PIC moved pork to be above beef and placed raw bacon in prep top cooler on the bottom shelf.

Observed handwashing sink in smokehouse with three containers of cleaning agents stored in it. The handwashing sink must be accessible at all times. CA: PIC will remove cleaning products from handwashing sink.

CA: Maintenance technicians came at time of inspection to fix coolers. Potentially hazardous foods held in sauce cooler were discarded.
